Birthday cakes to make for your friends during the pandemic.

Many of us have friends who have missed the chance to celebrate their birthdays due to the pandemic. Though we can’t physically be there for our friends, there are many different ways we can show our love for them of their special day. (Click here to read my previous article on ways you can celebrate a birthday during the pandemic). For us who like to bake, we can make a sweet treat for them! Here are some of my favorite recipes.

1. Chocolate cake
A chocolate cake is one of the simplest and common cake. Nothing beats a fluff, creamy chocolate cake. The history of chocolate cake goes back to 1764 when Dr. James Baker discovered how to make chocolate by grinding cocoa beans between two massive circular millstones.

2. New York cheesecake
Why choose the New York cheesecake over a regular cheesecake and what is the difference? Regular cheesecake consists mostly of heavy cream and sour cream to thin the batter and create a silkier, creamier texture. New York cheesecake is heavier on cream cheese which is why it’s so dense and rich.

3. Kue Lapis
Kue lapis is a traditional Indonesian cake. In Indonesian, lapis means “layers”. This steamed layered cake is very popular in Indonesia, and can also be found in the Netherlands due to their colonial links.

4. Blueberry cake
Blueberry cake is an uncommon one but I fell in love with it as a child when we would make blueberry muffins and then we decided to make it into the cake. It is sweet and fluffy. The amount of sweetness is perfect.

5. Carrot cake
Carrot cake originated from carrot puddings eaten in the Middle Ages when sugar and sweeteners were expensive and many people used carrots as a replacement for sugar. Carrots were used for moisture and sweetness in cakes.

6. Pandan cake
Pandan chiffon cake is like a cloud due to its fluffiness and softness. The scent of the cake comes from pandan leaves. Pandan cake is light, fluffy, and green-colored.

7. Vegan Matcha cake
Here is a unique vegan option for your vegan friends! Matcha is a finely ground powder of specially grown and processed green tea leaves. Matcha is usually used to make tea and latte and in this case, would make a great cake for your vegan friends.
